Update Contour Deps

Need to update to the latest version of Contour as well as use HTTPProxy now over IngressRoute.

Hey @stevesloka, is the Gimbal / Contour team actively working on this? I think that I have bandwidth to accomplish this, if not and you'd like for me to pick it up.

Hey, @jeremyrickard sound good. I should have updated this issue, but I did update to the latest version of Contour, so just the examples should need fixing up.
